Barfleur: Orage / Moules: Recette

On avait présenté les moules de Barfleur ici. Aujourd'hui, voilà une recette bien de chez nous.
MOULES A LA NORMANDE
Recette de Joël MESLIN, conseiller culinaire - Montreuil sur Lozon (Manche)
Ingrédients pour 4 personnes

2 l de moules de pêche de Barfleur
1 jaune d'oeuf
1 oignon et 1 échalotte hachés
1 cuillère à soupe de persil haché
2 cuillères d'huile
1 verre de cidre du pays d'Auge
10 cl de crème AOC d'isigny
100 g de beurre AOC d'isigny
2 branches de persil
Poivre et sel
Préparation

Dans une cocotte, verser 2 cuillères d'huile et faire revenir à feu vif les moules nettoyées quelques minutes avec l'oignon et l'échalotte hachée.
Dès que les moules sont ouvertes, ajouter le verre de cidre et une noix de beurre, puis la crème mélangée au jaune d'oeuf, poivrer, ne pas laisser bouillir, parsemer de persil haché et servir chaud dans la cocotte sur la table.

Et bien sur, accompagnez d'une une bonne bouteille de cidre bouché Normand!

We presented the Barfleur mussels here. Now comes the recipe.

MUSSELS, NORMANDY STYLE
Recipe by Joël MESLIN, culinary consultant- Montreuil sur Lozon (Manche)
Ingrédients for 4 persons

2 quarts mussels
1 egg yolk
1 onion and 1 shallot, diced
1 tablespoon of chopped parsley
2 tablespooms of olive oil
1 cup of Normandy cider
4 ounces of heavy cream
4 ounces of butter
2 stems of parsley
Salt and pepper
Préparation

Heat the oil in a pot and saute the mussels for a few minutes with the onion and the shallot.
As soon as the mussels open, add the cider and the butter. Stir the egg yolk with the cream, and pour into the pot. Add salt and pepper, make sure the sauce does not boil, sprinkle with parsley leaves.
Serve hot straight from the pot.

And it will taste even better if you can find a bottle of good sparkling cider.

Great capture of the light catching on the boats and light poles under the moody, brewing storm clouds.

Thank you for the recipe and thank you for a beautiful glimpse of the bay before the storm hits. The light is great, it is really worth it getting out "in front of the storm".
